Yes, I know. Sounds a little odd. Too starchy, prehaps. When my friend Maria spotted the macaroni and cheese pizza at a restaurant, she told me I had to make it. So I added it to my list of 50 million things I have to try to make.

 

Every time I browsed through my list, it continued to catch my eye. Perhaps, because it is so extreme. The double carb factor will both delight and appal foodies everywhere. I love a good challenge. I especially love a good shock.

 

I decided that if I decrease the pasta and increase the creamy sauce, then it’s fairly close to a white sauce pizza.

 

I made a regular macaroni and cheese, and baked it on a homemade crust with tomato sauce. For the imported cheese lovers, I cooked a white macaroni and cheese with brie, gruyère, and truffle oil.

 

And for people like my special friend Sean, I decided to recreate my buffalo chicken macaroni and cheese, and turn it into a pizza.

 

You can use your own macaroni and cheese recipe if you like. Just decrease the amount of macaroni added, and maybe increase the cheese quantity.

 

You can also use your own tomato sauce (should you choose to go with the regular pizza) and dough, or you can use my recipes.
My pizza dough comes out wonderfully, so I suggest you try it sometime.

 

You could even just purchase the dough and sauce pre-made from a grocery store. You lazy bum.

Honestly, if you are about to indulge in a guilty pleasure such as macaroni and cheese pizza, you may as well get off of your butt and burn at least a few calories making the dough yourself.

However you choose, this was creamy, rich and savory. Guilty pleasure, for sure, but something you must try.

Here is what you need for your macaroni and cheese pizza,

FOR THE PIZZA DOUGH:

– You can use the pizza dough recipe I used for the Savory Pizza
Cake, by clicking here.
I divided the amount of ingredients in half. If math makes you weary, make the
entire recipe as is, and either make a larger pizza or freeze half of the dough for another day.

FOR THE REGULAR MACARONI & CHEESE PIZZA:

- about 1 1/2 cups of cooked pasta
(attention! we all have our own preferences of how much should be thrown in, so
make about two cups and start off by mixing a little bit at a time)

2 tablespoons of butter

- 2 tablespoons of flour

- 2/3 cup of milk

- 2 ounces of orange sharp cheddar cheese, grated

- 2 ounces of Jack cheese, grated

1/4 teaspoon of chipotle powder

- 1/8 teaspoon of garlic powder

2 tablespoons of sour cream

salt and pepper, to taste

the pizza dough (store bought, or use the recipe as mentioned above )

corn meal (if you do not have a pizza stone, and plan on baking the pizza on a cookie sheet)

- tomato sauce (store bought, or you can use my homemade recipe from the
Savory Pizza Cake, by clicking here)

FOR THE WHITE CHEESE AND TRUFFLE OIL MACARONI
AND CHEESE

- about 1 1/2 cups of cooked pasta (attention!
we all have our own preferences of how much should be thrown in, so make about
two cups and start off by mixing a little bit at a time)

2 tablespoons of butter

- 2 tablespoons of flour

4 ounces of white cheddar, grated

2 ounces of brie

3 ounces of gruyère

3/4 cup of heavy cream (you can use milk too)

- 1/8 teaspoon of garlic powder

- 2 teaspoons of truffle oil

pepper, to taste

the pizza dough (store bought, or use the recipe as mentioned above)

corn meal (if you do not have a pizza stone, and plan on baking the pizza on a cookie sheet)

optional: parmesan cheese to sprinkle on top

 

FOR THE BUFFALO CHICKEN MACARONI AND CHEESE
PIZZA

2 chicken breasts

1/2 cup flour

Panko bread crumbs or regular bread crumbs

- buttermilk, or regular milk

** If you do not want to bread your own chicken, then feel free to buy some already made, if you want to make from scratch then buy the above

- about 1 cup of cooked pasta (attention! we all have our own preferences of how much should be thrown in, so make about two cups and start off by mixing a little bit at a time)

- 1/4 cup of buffalo sauce, plus a few drizzles to toss the veggies and chicken in

- 1/8 cup of sour cream

1/4 teaspoon of mustard powder

- 2 tablespoons of butter (for cooking the veggies), plus another 2 tablespoons (for the cheese sauce)

- 3/4 cup of heavy cream

- 1/2 teaspoon of flour

- 4 ounces pepper Jack cheese

9 ounces of orange sharp cheddar cheese

1 small onion, diced

1-2 stalks of celery

1 clove of garlic

Top your buffalo mac n’ cheese with these ingredients once on the pizza:

panko bread crumbs (about 1/4 cup)

- crumbled blue cheese

- chopped fresh parsley

If you want to drizzle blue cheese dressing on top, you can buy some, or make your own like I do using these ingredients:

- 2 ounces or 1/4 cup of blue cheese

- 2 teaspoons of cream (or milk)

1/2 cup of mayonnaise

1/2 teaspoon of dijon mustard

- 1 tablespoon of white wine vinegar

a dash of salt and pepper

THE INSTRUCTIONS ON HOW TO MAKE BUFFALO CHICKEN MAC & CHEESE CAN BE FOUND HERE. JUST MAKE SURE TO USE THE MEASUREMENTS ABOVE, INSTEAD.

 

 

 

Begin by making your pizza dough. This should be done first, as it needs time to rise. If you want to make it ahead of time, let it rise and then store it in the fridge if you want to use it the next day (or the day after… I totally forgot it was there but it was still okay). Remember, the directions to make it is here.

Now, TO MAKE THE WHITE TRUFFLE OIL MACARONI AND CHEESE,

Measure out your ingredients, grate your cheese, and cook your pasta.

Ingredients for white truffle macaroni and cheese

 

 

 

Melt yo butta. Medium heat.

Melt the butter

 

 

 

Mix in yo flowa. Stir in yo cream.

Whisk in flour, and then cream or milk

 

 

 

Let it simma. Toss in the rest of the ingredients, sans da pasta.

Toss in your other ingredients, except for the pasta

I have to say. The buffalo chicken macaroni and cheese is outstanding, but this was a dream of unicorns and rainbows and Punky Brewster all mixed together.  My French friend Yannick tried it and said it was very good. Her favorite, in fact. She’s French. French people know their food.

I like my mac n’ cheese like I like my men who carry Godiva chocolates around to feed me with: Rich. And Creamy.

This is rich and creamy, my friends.

 

Anyhoo, stir that up like mad crazy until it is smooth. Allow it to thicken, then add pasta.

 

 

TO MAKE THE BUFFALO MACARONI AND CHEESE,

 

You will need the macaroni and the ingredients for the cheese sauce.

You will need you ingredients for the veggie and chicken mix-ins.

Should you choose to make blue cheese dressing, you will need those ingredients too.

Should you choose not to make, then go buy a jar of it at the store (yeah, I like the jar kind in the produce section. It tastes better). Now.

TO MAKE THE REGULAR MACARONI & CHEESE,

 

Get your ingredients ready.

Ingredients for regular macaroni and cheese

 

 

 

 

Start with your butter, on medium heat.

Melt the butter

 

 

 

Whisk in the flour, then stir in the milk. Redundant, I know.

Whisk in flour, and then cream or milk

 

 

 

 

Toss in all of the other ingredients, sans the pasta.

Toss in your other ingredients, except for the pasta

TO PUT CONSTRUCT YOUR PIZZA,

Flour a surface and roll the dough out with a rolling pin covered in flour.

Roll out your dough

If you are using a baking sheet rather than a pizza stone, cover it in corn meal.

 

 

Place the dough on the baking sheet/stone, then top with your macaroni and cheese.

 

If you are making the regular version, don’t forget to top with the tomato sauce first.

As for the buffalo chicken mac ‘n cheese, place mac ‘n cheese on, then panko bread crumbs and blue cheese.

 

Bake your pizza (or pizzas, if you insist on trying everything like I usually do) at 415 degrees for about 20 minutes, give or take. You should bake it until the crust is beginning to brown.

 

If you are making buffalo, once removed from oven and top with parsley, as well as a drizzle of blue cheese.

 

For the white truffle oil, an option is to top with cracked pepper and shredded parmesan cheese.

 

**A note for my nit picky followers (you know who you are). When I made these, I used 2 cups of pasta and found it to have too much once baked. This is why I say to start with less, and add some more a little at a time. Probably no more than 1  1/2 cups. Wait a few minutes in between each addition to see if it thickens up just right. You want some pasta to be there, but not to overwhelm with carbs. The sauce should have a stronger presence than the pasta.

Also, I suggest doing the same with the cheese. Feel free to add more cheese if it doesn’t thicken enough.

 

 

Allow pizza to cool for a few minutes. Serve.

 

Ahhh those little guilty pleasures that get us through life. Is it bad for you? Sure.

 

It’s so bad, but it’s so good.
