Chocolate Covered Strawberry Hearts. Have you heard of Dollhouse Bake Shoppe? Well, it is a very cute blog and store with tutorials for cake pops and all things cute.   Lindsay Ann from Dollhouse Bake Shoppe invited me to participate in a “virtual” Valentine’s Party.   1. I love the name Lindsay Ann. I have decided to shift my middle name to my first. From this point going forward, you will call me Jasmin Rebecca. Okay, probably doesn’t work quite as well. 5-syllables.

2. I had to look up what a virtual party is. I am so sheltered. But now, I am not only in the know, I am cool enough to get invited to the hottest parties. Eat your heart out Paris Hilton.

3. Valentine’s Day is a challenge for me. I roll my eyes at romantic movies, and decided pink and purple were no longer my favorite color by age 11 (replaced by blue and green).

 

How will I create something that says, “love”?   There are two things I am certain of:

1. The best part of Valentine’s day as a child was not receiving the candy, but making those silly cards in art. The more glitter the better. Glitter was like a drug for me. Imagine me, but much smaller and bowl cut bangs (thanks, Dad) dumping glitter in wide-eyed hysterics. I would bite any classmate who tried to grab the glitter first. Those flecks adhered itself to my skin and hair for the better part of the year.

2. I LOVE my stuffed strawberry recipes, so why not create a Valentine’s version of the food that I feel unconditional affection for?

 

And so, my chocolate covered strawberry hearts (covered in glitter, of course) were born. By the way, there is no gluten in these in case you have an allergy or special diet.

 

Please feel free to join me at the virtual Valentine’s Day party. I will be spiking the punch and double dipping my chips in the dip, when I’m not serving chocolate covered strawberry hearts. If you’re lucky, maybe I’ll freestyle rap about glitter. Red glitter. Not pink or purple.

 

Here’s What You Need For Your Chocolate Covered Strawberry Hearts. Filled With Marshmallow

FOR THE MARSHMALLOW

-store-bought marshmallow cream (Fluff is one brand, but there are probably more natural versions out there) OR cook you own as I always do and experience the most heavenly thing you have ever tasted

-2 egg whites

- 1/4  teaspoon of cream of tartar

–  1/2 cup of corn syrup

- 1/2 teaspoon of vanilla - 1/4 cup of sugar (granulated..you know the kind people put in their coffee) + another 1 tablespoon of sugar

1/6 cup of water

 

*Obviously marshmallow cream from the store is quicker if you are an impatient cook, or don’t want to buy a candy thermometer. The home-made version tastes much better, so weigh your options. You do not even have to use marshmallow at all if it isn’t your thing.

- good quality dark chocolate

either red candy melts OR a red candy pen (Both can be found at baking supply stores, some iParty stores, or arts & craft stores. William Sonoma sells a few colors in candy pens as well.)

red disco dust (this is like an edible glitter, I purchase mine at baking supply stores or online. Google it.)

UPDATE!!: Disco dust used to be labeled as non-toxic, but now they have added the label non-edible as well. In other words, it is intended for decoration and not necessarily consumption. Should you still choose to use it, consume at your own risk.

- strawberries (larger ones are better, since they hold more strawberries but medium strawberries are fine. Heck, even small ones works so long as you don’t need a ton of marshmallow.)

 

To make your chocolate covered strawberry hearts, begin by making your marshmallow. You need a candy thermometer.

 

Grab your marshmallow ingredients.   ingredients for marshmallow cream

Toss the egg whites and cream of tartar into a clean mixing bowl.

Mix on low to medium low.

As soon as the egg whites begin to froth up, slowly add the tablespoon of sugar.

Stop once soft peaks form when you lift the mixer attachment out of the egg whites.     Now pour  1/6 cup of water, corn syrup and the 1/4 cup of sugar into a sauce pan. Attach a candy thermometer. Heat on medium, stirring occasionally.

If you have not used a candy thermometer, do not be afraid. It is a very useful tool, and some even measure oil temperature for frying food. You set it either at a temperature, or certain candy stages. For this, you would set it at “firm-ball stage.”

 

Cheaper candy thermometers only have a thermometer, so you need to keep an eye on it as it will not beep once it has reached temperature.

 

Once the mixture has reached 245 degrees, turn off heat and IMMEDIATELY remove from stove. Use something heat–safe to grab the sauce pan by its handle.   Turn the mixer on low (with the egg white still in the bowl) and slowly pour the sugar into the  egg white.

A stand alone mixer works nicely for this.   Keep in mind that once you remove the sugar from the heat you need to work pretty quickly. The sugar begins to hard as it cools. Don’t freak out or anything. Just have everything prepped and move efficiently

 

Once the mixture is poured in, increase mixer speed to high and beat for about 4-5 minutes. Add the vanilla.

Perfect.     To construct your chocolate covered strawberry hearts, now cut your strawberries.

1. Rip the stem off. 2. Slice in half down the middle. 3. Use a small knife to cut out the middle of each half (top right-hand corner). 4. Stick a toothpick through each half to attach them. 5. Optional: throw a little disco dust inside. 6. Use a butter knife, small knife or spoon to scoop marshmallow into each half.   Here’s a closer view of the steps.

*Tip: Before scooping marshmallow into strawberry, use a paper towel to dry out as much of the liquid from the strawberry as possible. It will make it easier to coat with chocolate.

Now to melt your chocolate. You know, since they are strawberry hearts covered in chocolate, and all.  If you are not picky about the appearance of your chocolate, simply break it up and melt in a double boiler. This is a sauce pan filled with water. A glass bowl is placed on top so that the water is in contact with the bottom of the bowl. Turn on the heat to low. Stir chocolate until melted and smooth.

 

If you want to have glossy chocolate that snaps nicely and looks more professional, you want to temper your chocolate. Do the same as above, but place in only half of your chocolate. It also helps to chop it into smaller pieces than in the photo.   Now you need to use a chocolate thermometer to measure the temperature.

 

You could always use a digital candy thermometer, but it won’t necessarily be as accurate or register at a lower temperature required for chocolate.

 

It’s up to you. Click here to understand the difference between a candy thermometer and a chocolate thermometer.   Melt chocolate in double boiler until it reaches about 116 degrees for dark chocolate.

 

Remove from heat. Stir constantly, adding in the other half of the chocolate. Add a few chopped pieces a little at a time, until it is melted in. Then add a little more.

 

how to temper chocolate

 

Measure the temperature from time to time, and continue to stir constantly. It will be a little bit of a workout for your arm.   Once the temperature lowers to about 85 degrees.   Place back onto pan with water and warm up, but only a few degrees (up to 90 degrees). The chocolate is ready to use. If it begins to set, feel free to warm it back up again, but no higher than 90 degrees.   Temper or not, your chocolate covered strawberries will taste amazing.

The next step is to dollop the chocolate onto the strawberries and marshmallow. Carefully use a small knife or spoon to spread the chocolate so that it pours over the sides.   Make sure the strawberries are dry (use paper towel) before covering in chocolate.   If you wanted to, you could stop now and simply remove the toothpicks. Or, you can cover the top side as well.

Turn strawberries over, remove toothpicks and dollop more chocolate on top. Push the chocolate so that it pours down the sides.   Using a cooling rack for cookies is very helpful.   If you want to glitter up your chocolate covered strawberries, melt your red candy melt or candy pen (directions on back of pen). Drizzle on top of strawberry and then pour disco dust over.   Once the red chocolate hardens, pick up chocolate covered strawberry and shake off excess.

    Hi! Found you through “Holidays” on FaceBook. These are too cute and different! I really wanna make these now. :) I don’t know if there’s any bakery shops around here so I’m going to check out Michael’s (or possibly Hobby Lobby) for the disco dust. I ~LOVE~ the glitter!! Just seeing this now, I wouldn’t have time to order any from online, so hopefully one of those stores sell it.

    Two questions:
    1) The red candy melts… Those are the same candy melts one would use to make those candy lollypops, right?

    2) I see that you remove the toothpicks from the strawberries after the chocolate is brushed onto one side. But I would want to wait for the chocolate to dry first, right. Same with coating the other side, wait till the first side is dry. Right? (Sorry if those a silly questions.)

      Disco dust will not be at Micheal’s or Hobby Lobby. You need to go to a baking supply store. Where do you live? I can look one up for you.
      1. Red candy melts are found at Hobby Lobby or Michael’s. They are usually used for cake pops. Just ask one of the people working at either store and they can show you.
      2. Yes, wait for the chocolate to dry, then remove toothpicks carefully. AFTER toothpicks are removed you coat the front side with chocolate as well.

    I just wanted to thank you for putting your website’s URL onto your images. I saw this recipe on Pinterest, but the link lead absolutely nowhere. If you had not included your URL, I would have never found this place! The only issue I had is that it took me a while to decipher the URL because the font was so “scripty” and small. I kept thinking it said “Hinecookie.com” LOL However, I saved the image and then zoomed way in, and was finally able to figure it out. ;) But anyways, thank you again!

If you are going to post items on pinterest and put a disclaimer from your site you have to realize that not everyone is going to check out your site just because they see a picture they like and want to share. If you want to put a copyright on it then fine, however if you want to advertise your site then it’s your responsibility to put your site url on the picture otherwise DON’T share on pinterest and threaten my blog or pages.       1. The second a person clicks the button on their camera and records a photograph, the moment a person publishes a writing piece, it is AUTOMATICALLY copyright protected. I don’t have to WANT a “copyright on it”, it just is my intellectual property the second I create it. It naturally occurs. Nothing has to be done on the artist’s/writer’s/etc. end. I can choose who shares my photos and how, and who does not. That is my right. You posted my photo and didn’t bother to find/credit the original source. I had the right to have it removed. Simple as that.

      2. You did not receive a complaint, you had a photo taken down from your page. A complaint would have been a whiny message from me. I filed a report and it went bye-byeeeeeee.

      If it was removed from your Facebook page successfully, then YOU were doing something wrong and not me, as Facebook typically abides by the law and acts accordingly. Nobody threatened your blog or pages, whatever the heck it is. YOU used a photo and did not link back, and I had the legal right to have it removed. YOU did something wrong, and therefore YOU are the one who “threatened” your own pages/blog. Stop displacing blame.

Most people I follow on Pinterest DO take the time to make sure the photos they “share” are linked appropriately to their original source (That is why many bloggers are okay and encourage Pinterest. Many actually know how to share responsibly, just not you.) On occasion, some people don’t realize and it is not linked. They usually look up my recipe and say things like “Whoops, sorry about that. I had no idea, but I am glad I found you.” I am sure I myself may have Pinned a photo that might be linked to the incorrect source. If someone reported the image and had it removed I would not be upset, I would be glad for them.

      I WILL keep using Pinterest for my responsible and smart fans. I WILL report you if you cannot link my photos back to my site.

    I just need a definition, when you say e.g. 245 degrees on the marshmallow receipe, do you mean Celcius?
    Can I use the marshmallow cream to form regular marshmallows or are those two different things? I love marshmallows but unfortunatelly I can’t find any… Either solid or in cream :)

      Fahrenheit, not Celsius. Marshmallow cream is soft and spreadable. Some places it is known as fluff, but I suspect only in North East US. Okay, maybe only Massachusetts.
      You can always spread in Nutella or a different filling, if you can’t handle making marshmallow cream.

      The marshmallow is intimidating, but not difficult after you’ve tried it once. Has a million uses!

    Hi! I think the disco dust is non-edible , right? Seems like those websites who sell disco dust stated that it’s non-toxic but also non-edible.

      @calily, that is correct. Disco dust *could* be consumed but is not recommended. I made this several years ago and stores have since changed to say non-edible (it used to only say non-toxic). Considering what we consume and put in our bodies without realizing it, I personally have no issues with consuming about 1/50 teaspoon of a little disco dust. That’s just me though.

    HI! I really want to make these for my boyfriend for Valentine’s Day this year; he simply LOVES chocolate covered strawberries, and this is the perfect, non-cheesy treat to make for him. I was wondering how long they will stay fresh? My boyfriend and I live together and have similar work schedules, so the only time I am ever really alone to do anything without him knowing, is Saturdays (today lol) or when he has to stay late (this Monday). If I made them today or Monday, would they stay fresh until Friday (Valentine’s Day)? Thanks!

      @leslie, I haven’t made these in a while, but I do remember they lose their freshness.
      As long as he doesn’t mind them being a little “juicy” when he bites in then they should be okay. Don’t use very ripe strawberries. Make sure they are firm. Have them completely covered in chocolate. Store them with paper towel underneath and minimize exposure to air as much a possible. That should help. Monday the very earliest.

    Hi! I’m definitely giving this a try for V-day! Do you think I can substitute the marshmallow creme with whipped cream? Or would it just melt too quick when covered by the chocolate? And for the candy pen, is that the same as the icing tubes usually in the small baking section of grocery stores? Thank you!!

      I would not as it has a high water content and goes bad quickly.
      Try white chocolate, Nutella, or leave out the filling and don’t hollow out at all.

    I am making these right now and I can’t get the disco dust to just stay on the red melt. It stays over the whole chocolate. What am I doing wrong?

      @megan, wait for brown chocolate to be completely cooled and hard. Then, drizzle on red candy melt. While red candy melt is still melted, then shake on disco dust. Once red candy melt is cool and hard, shake off excess disco dust. Use a paint brush to brush off disco dust still sticking to brown chocolate.

    Made this last night! Everything went well, but they do not look as good as yours, unfortunately. :P I had difficulty covering the strawberries and marshmallow with the chocolate without it getting messed up and not looking as smooth and neat, haha. It tastes really good!

      The key is to not overload the marshmallow, and to keep the strawberries as dry as possible, dabbing with paper towel. I’m sure next time they will look even better.
