This recipe uses fresh veggies (or fruit), and celebrates the birth of our nation. If you don’t love veggies and Independence day, well, you are un-American. Unless you are actually not American, then feel free to change the vegetables to whatever colors you please. BUT. If you are an American, don’t be un-American and ignore this recipe unlike a true American would.

 

Ingredients for the Rice Paper Vegetable Rolls. Shaped like Stars

Any of your favorite fruits or vegetables (I chose cucumber,  red pepper, and eggplant- Red, white, and blue.)

rice paper wrappers

Cookie cutter or homemade stencil

Food writer pen(s)

 

Begin by tracing sheets of rice paper with a cookie cutter and a food writer pen. Don’t worry the ink is “edible.”

Cut it them out with scissors.

 

Next, use a food processor with a shred attachment to Julienne your choice of produce.
Use red, white and blue for the 4th of July.

These cucumbers had it coming to them…

Dry off with paper towels.

 

Dip your first rice paper shape into warm water for about five seconds and drip off excess water.

Place on a plate and top with shredded vegetable or fruit.

Dip the next shape in, and set on top. As it softens, press along the edges so the two rice paper stars into a pouch. Talk about a great way to get kids to eat their vegetables. Or… adults.

 

Once you have enough vegetable rice paper rolls (or pouches, technically) allow to sit on the plate and cover the top tightly with plastic wrap.

Tips:

*As you make them, do not try to peel off of plate. Allow to sit and when the plate is full cover overnight. They peel from the plate better the next day.

*If edges of stars won’t stick together dip finger in water and dab on top. Wait for a few minutes and they should stick better.

*Do not let them sit uncovered for a very long time or the paper will dry out.

*Shred or chop filling food as much as possible. Don’t stuff too much in between the rice paper stars.

 

You can serve these with anything you like to dip vegetables or fruit in. I went with a “ranch.” Fresh herbs and pepper mixed into Greek yogurt (instead of mayo and sour cream).

    I love the look of these. What veggies did you use for the red and blue stars?

      @lynn, Red peppers, cucumber (with skin peeled off), and blueberries. Eggplant would work in place of blueberries if you would like to keep it all vegetable!
