Valentine’s Popcorn Sundae Cupcakes
Per usual, I HATE Valentine’s day but feel giddy when I get to make desserts for it. That’s why my job is cool. I get to experience the fun part (chocolate cakes, all) and skip the cruddy part (buying stupid cards, giving corny gifts, cliché red roses, cheap candy, pitying single people).
I have managed to get out of VDay almost 6 years and counting. Okay, I have been “dragged” to a steakhouse most years, but that doesn’t count since I eat at those 24/7/365 if I can. Nothing special or celebratory about that. Always make sure to order the à la carte sides. Don’t bother with the baked potato unless it’s loaded.
Here is my take on it. It should be about LOVE in general and not couples/family. As in, love yourself too! Or love humankind and do something generous for a stranger.
Like ordering the As Seen On Tv “Furniture Fix” for your sagging couch you’ve always wanted.
Don’t forget to show your love for people by doing something nice for a stranger. Such as, giving sandwiches out to homeless sleeping on the sidewalk. Then, one will ask for $5, and could you please grab him a coffee too so he doesn’t lose his spot?
So show yourself a little love this year with some popcorn sundae cupcakes. They’re decorated to look like sundaes, so they don’t actually melt. They’re ADORBS!
Ingredients for Valentine’s Popcorn Sundae Cupcakes
- Freshly popped popcorn (I use Kernel Season’s™ Premium Popping Corn)
- Cake batter
- Home made frosting
- Gumballs or heart-shaped candy
-Optional: Kernel Season’s™ Popcorn Seasonings (choose your favorite flavors)
First, pop popcorn according to package instructions then as an option, season with any flavor of Kernel Season’s popcorn seasoning. You could pair Cheesy Jalapeño with devil’s food cake, Popcorn Salt with chocolate cake, Butter with yellow butter cake, Milk Chocolate Caramel with any cake flavor, Bacon Cheddar with chocolate fudge or Caramel with strawberry cake.
Next, prepare your cake batter, pour into cupcake liners and press a few of the seasoned popcorn kernels into the mix. Place cupcakes in the oven and bake according to cake instructions.
Before frosting, allow the cupcakes to cool completely. Once ready, frost the cupcakes and cover frosting with more seasoned popcorn kernels.
Once the cupcakes have been frosted and adorned with seasoned popcorn, you can then begin to decorate. Using the chocolate, candy and sprinkles, make the cupcakes look like little Valentine’s Day ice cream sundaes. Use large gumballs as cherries and drizzle chocolate or frosting on top to look like hot fudge. Feel free to mix and match different colored sprinkles with the cupcakes and remember to have fun while decorating!
Tip: If adding a candy or gumball to top of chocolate for the “cherry,” wait until it is almost completely cooled, but still sticky. Then lightly press the candy on top
